Winter Daiquiri

- 1.5 oz aged rum (Doorly's 12 year)
- 3/8 oz vanilla syrup
- 1/4 oz Maggie's Farm Falernum
- 3/4 oz fresh squeezed lime juice
- 1 dash Angostura bitters
Shake with ice and strain into a chilled coupe glass. Garnish with a half lime wheel studded with cloves.
This is another recipe we discovered in Paul Clarke's highly recommended book The Cocktail Chronicles in the wonderful section featuring recipes based on the classics, in this case the Daiquiri. The drink was created by Mindy Kucan at the tiki bar Hale Pele in Portland, Oregon. Hale Pele is a classic tiki bar complete with volcano, guaranteed to erupt from time to time, and an excellent cocktail menu—definitely worth a visit if you are in the area.
We must confess to a little tinkering with the recipe. We swapped out the original allspice liqueur for Maggie's Farm Falernum and reduced the vanilla syrup slightly. We found the allspice liqueur a little overpowering. The falernum tones down the spice a little while still bringing ginger and clove, though it does increase the tartness some.
