- 1 oz gold rum
- 1 oz aged rum
- 1/4 oz cinnamon syrup
- 1/4 oz rich Demerara syrup
- 1 oz fresh squeezed lime juice
- 1 dash Herbsaint Liqueur (or similar anise-flavored liqueur)
- 1 dash Angostura bitters
Shake with ice and strain into a chilled cocktail glass.
This is a drink created by Martin Cate of Smuggler's Cove. It is named after their rum club and served at club events. The instructions Martin gives are for serving as a punch in large quantities but it works just as well shaken and served up.
The drink is a delightful rum sour with just a hint of cinnamon and anise in the background to add a little complexity. It can be thought of as a Barbados Rum Punch with the addition of a touch of cinnamon syrup and a dash of anise liqueur. It makes a wonderful summer punch.
