Rum Old Fashioned

- 2 oz aged rum
- 1 tsp (5 ml) rich Demerara syrup
- 1 tsp (5 ml) allspice dram (St Elizabeth)
- 2 dashes orange bitters
- 2 dashes Angostura bitters
Combine ingredients in a rocks glass. Carefully add a large (two inch) ice cube and stir until chilled (about 10 seconds). Alternatively, stir with ice, strain and serve over a large ice cube in a rocks glass. Garnish with an orange twist.
We found this recipe on Liquor.com. It takes the drink in a different direction from the traditional rum old-fashioned, the Corn 'N' Oil. Here we have the aroma of orange from the garnish, the richness of the Demerara syrup and the faint but very pleasant aftertaste of Christmas cookie spice from the allspice dram. The original recipe simply calls for dark rum but that covers a wide range of rums, many of them best used for mixing. We have tried Plantation XO 20th Anniversary, Plantation Barbados 5 year and Appleton Estate Rare Casks 12 year rum with success.
