Intro to Aperol was created in 2006 by Audrey Saunders, owner and beverage director of the Pegu Club in New York, which opened its doors in 2005 (and sadly closed them in 2020). She created the drink to introduce customers to the delights of a little bitterness in a cocktail.

Aperol is a low-alcohol, Italian, bittersweet aperitif intended to stimulate the appetite before a meal. It is bright orange in color with flavors of orange and bitter herbs. In the Intro To Aperol it makes a wonderfully refreshing drink with a slightly bitter finish offset by the sharpness of the lemon. The original recipe includes 1/4 oz of simple syrup but we feel that this is unnecessary and makes the drink a little too sweet.
